Irish Stew

  • 2 Tablespoons Oil
  • 4 Large Onions, cut into wedges
  • 5 Large Carrots cut into thick slices
  • 1-1/2 Pounds Round Steak cut into 1/2" cubes
  • 6 Large Potatoes, peeled and sliced
  • 1 Cup Water
  • Salt and Pepper to taste
  • Heat oil in large saucepan or skillet. Sauté onions in oil. Add carrots and cook for 4-5 minutes. Add steak cubes, potatoes and water and bring to a boil. Skim off any foam and reduce heat to a simmer and cook until meat and vegetables are tender. Stew can be thickened if desired by mixing 2 Tablespoons flour with a bit of water and stir it into the stew and bring up the heat until the proper thickness is attained.

    Serves 6
