Cheeseburger in Paradise

From the cookbook "20,000 Gallons of Chowder" by Ray Dunn

Like Jimmy sings: “I like mine with lettuce and tomato, Heinz 57 and French fried potatoes, big kosher pickle and a cold draft beer, good god almighty which way do I steer?” Sing along if you like.

  • 2 pounds lean ground beef
  • 1 cup white onions minced
  • 2 teaspoons cumin
  • 2 cloves garlic minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 egg
  • 6 large hamburger buns
  • 6 slices cheese (whatever kind does it for you)
  • Toppings: use some or all

  • Lettuce
  • Sliced tomatoes
  • Sliced dill pickles
  • Sliced onion
  • Crisp bacon
  • Heinz 57, catsup, mustard, mayonnaise, avocado...
  • Mix the first seven ingredients well in a bowl and form into six patties. Grill on the barby for about 5 minutes on each side. During the last minute or so, lay a slice of cheese on each burger. Toast the buns around the edges of the grill. When done let everyone dress his or her own. Open up another beer and turn up Jimmy on the stereo just a notch or two.
