Stuffed Mushrooms

 

24 medium to large mushrooms
1 lb. Low fat sausage
Finely dried mushroom stems (from mushrooms)
1/2 white onion, finely diced
1 C. grated parmesan
1/2 C. seasoned breadcrumbs
1 t. Italian seasoning
2 T. butter
Salt and pepper to taste

Sauté sausage (broken up into fine pieces), onion, dried mushroom stems. Remove from heat. Pour into large mixing bowl and add rest of ingredients. Stir well. Using 3 tsp. ice cream scoop, put stuffing in well of mushroom.

Place mushrooms on parchment lined cookie sheet and broil until lightly browned or bake at 400 degrees for 15 minutes.
