Zucchini and Feta Sauté

  • 1 TBL Olive oil or butter
  • 1 cup Zucchini slide into small pieces
  • 1 medium Walla Walla sweet onion, sliced thin
  • 1 TBL fresh Oregano
  • 1/2 cup cherry tomatoes
  • 3/4 cup crumbled feta
  • Add oil or butter to pan and bring to heat, add zucchini and onion and sauté. Remember not to overcook the zucchini; it is best with a little crunch to it. Add tomatoes, oregano, and cheese and cook for one minute or until cheese softens.

    This dish makes an easy and great side. Experiment with different squashes and onions, and try it with radishes!
