White Chicken Chili

  • 2 cans white beans, or 1 lb soaked dried beans
  • 2 c diced cooked chicken
  • 2 cans chicken broth
  • 1 onion diced
  • 2 t cumin
  • 2 t oregano
  • 1/4 t cayenne
  • 1/3 t salt
  • 2 cloves minced garlic
  • 8 oz. can diced green chilies
  • 1 small jar of tomatillos
  • 1 T olive oil
  • For holiday flair add finely diced red bell pepper to the mix!

    Saute onions in olive oil until mostly cooked through. Add all seasonings and cook for 2 more minutes, stirring constantly. Add drained canned beans or cooked dried beans, canned chilies and tomatillos, diced chicken, and broth. Simmer for one hour.

    Garnish with cilantro and finely diced red pepper for the holidays. Serve with fresh bread and salad!
