Vietnamese Chicken Marinade

  • 1/2 c. garlic
  • 1/2 c. dhallots
  • 1/2 c. fish sauce
  • 1/2 c. sugar
  • 1/2 c. soy sauce
  • 1/2 c. dry sherry
  • 1 tsp. Five Spice powder
  • 1 T. black pepper
  • Blend all ingredients in a blender. Pour over chicken legs and thighs. Barbecue or bake in 350-degree oven for 40 minutes.

    This is a great recipe to prepare ahead of time. It is easy to put chicken into ziplock bags, and marinate overnight. These bags are easy to transport outside, or to beach or friends house for a BBQ.

    Great served with BBQ Pineapple. Simply inject pineapple with Contreau, let it sit a couple of hours, slice pineapple into 1/2-inch slices and place on grill. You can also slice pineapple and place it on the grill without injecting it with anything.
