Chalupes

  • 3 lbs pork loin roast
  • 2 -1/2 lbs pinto beans
  • 4 garlic cloves mashed
  • 1-teaspoon garlic powder
  • 1-tablespoon salt
  • 2 tablespoons chili powder
  • 2 teaspoons cumin
  • 1-teaspoon oregano
  • 2-jalapeno peppers-finely diced
  • Place pork and beans into a pan and cover with water. Add all other ingredients. Bring to a boil and then to a low simmer. Cook 4-6 hours or until meat falls apart. Add water as needed. Remove bones. Shred meat if desired.

    Serve with:

  • shredded lettuce,
  • grated cheese
  • tortilla chips
  • chopped onion
  • sour cream
  • diced tomatoes
  • avocado
  • hot sauce
  • warm flour tortillas
  • Chalupes make for a tasty dish, ripe with flavor and bursting with color. An easy Saturday dinner.
