Avocado Orange Salad

  • 1 lb. Baby spinach, washed
  • 3 avocados
  • 4 seedless oranges
  • 1/4 C. honey
  • 3 T. lemon juice fresh
  • 1/4 t. salt and pepper
  • 1/2 C. extra-virgin olive oil
  • 1/2 thinly sliced red onions
  • 6 fresh mint leaves thinly sliced
  • Wash spinach, then dry. Set aside. Peel and slice avocado. Peel oranges, slice thinly into rounds.

    In a small bowl blend together lemon juice and salt until salt dissolves. Whisk in honey, olive oil, onion, mint and pepper.

    Arrange spinach, avocado and orange slices on individual plates or in a large bowl.

    Drizzle dressing over each plate or pass separately. Great dish! Refreshing with Holiday dinner.
