Apple Sauce Cake with Penuche Frosting

  • 2-1/2 cups flour
  • 2 cups sugar
  • 1-1/2 t soda
  • 1-1/2 t salt
  • 1/4 t baking powder
  • 3/4 t cinnamon
  • 1/2 t cloves
  • 1/2 t all spice
  • 1-1/2 cups chunky applesauce
  • 1/2 cup water
  • 1/2 cup shortening
  • 2 eggs
  • 1 cup raisins
  • 1/2 cup finely chopped walnuts
  • Set oven to 350 degrees. Grease/flour a 13x9x2 baking pan. Put all the ingredients into mixing bowl and blend 1 minute on low speed. Beat 3 minutes on high speed. Pour into pan. Bake 60-65 minutes. Cool, then frost.

    Penuche Frosting

  • 1/2 cup butter
  • 1 cup brown sugar packed
  • 1/4 cup milk
  • 2 cups confectioner's sugar
  • Melt butter in saucepan. Stir in brown sugar. Heat to boiling, stirring constantly. Boil and stir for 2 minutes over low heat. Stir in milk, heat to boiling, then remove and cool till lukewarm. Gradually stir in confectioner's sugar. Place pan into a bowl of ice water -- beat until it is of spreading consistency.

    *Great made 2-3 days ahead and aged. Keep well covered.
